The Flow
Don't order everything at once. Order one or two rounds, eat, drink, assess your hunger, then repeat. Tapas is a marathon, not a sprint.
The Stance
If there's space at the bar, take it. The bar is where the action is. You eat standing up, surrounded by noise. It tastes better this way.
The Share
There is no 'my dish'. Everything in the middle of the table is communal property. Fork wars are acceptable; plate hoarding is not.
Chapter 03
La Dolorosa
Literally "The Painful One" (The Bill). Getting the check requires assertiveness. Waiters are busy; they won't bring it until you ask.
